The first few days of Summer break with the kids always feel a bit...weird. The kids have quickly adopted my philosophy of late nights and even later mornings, the Sun has been blazing Hot, the air Hazy, and I, well, I am still Adjusting. Also, my house? It's the place to be for all the kids and all their friends... Obviously.
While I have been having a hard time rearranging my previous "schedule", I have, of course, somehow, managed to outdo myself in the Mom department once again. Ok, not really. I did, however, make these amazingly simple Frozen Bananas, and hey, who doesn't love a frozen banana?
There aren't many things that all five of us in this house LOVE when it comes to food, but we can all do bananas, peanut butter, and chocolate. And,after a three day heat wave spent almost entirely out in the backyard drinking lemonade, swimming, laying in the Sun, playing tag, and whatever else it is these kids have been up to, it was the perfect way to occupy my kids and their bagazillionmillion friends when *gasp* they had to stop swimming due to the severe thunderstorms that rolled in Friday afternoon.
I know you're thinking it, and yes, you are right. These fucking things have Rock Star written all over them. Just, in invisible ink.
PB Chocolate-Covered Frozen Bananas
Ingredients:
3 medium bananas, cut into bite size chunks
1/2 cup choc chips ( I used semi sweet, I am sure milk choc is fine, though)
1/2 cup creamy peanut butter
Crushed Honey Roasted Peanuts (optional, for topping)
Chances are, you already have this shit laying around the house, because I did. If I had it, you most definitely do, because I haven't had time to pee lately much less food shop. So, go get them, and then:
Directions:
*In microwave, melt the choc chips and peanut butter, stirring until smooth with a rubber spatula
*Dip banana pieces until coated, which is rather messy, and I tried a few things to make it not messy ( ocd here) and none of them worked so I gave in and we all used our hands
*Gently roll/dip/or sprinkle toppings on
*Place the pieces a few inches apart on a wax or parchment paper lined cookie sheet and freeze.
**after an hour, I transferred them from the cookie sheets, to a Rubbermaid container lined with Parchment paper and sealed tightly in the freezer.
Seriously, I didn't forget to add something. That's it.
In about an hour, the Peanut Butter Chocolate coating will have hardened, and the bananas will be firm, but not frozen. I suggest freezing them for at least 4 hours if you really want to see why people say frozen bananas taste like ice cream. 'Cuz they kind of do.
Not only do I have a plentiful supply of FLA-VO-ICE, but now, I've got PB Chocolate Covered Frozen Bananas. Which, by the way, are the best of everybody's, according to the little girl from down the street.
I'd say that's pretty Rock Star already, and Summer's just begun.

This looks really delicious! I love all those ingredients, separately, together, what have you. If I make this, I'd have to leave out the PB since we have an allergy in the house. Your photos are fabulous, too!
ReplyDeleteOne of our summer recipe is making a fruit smoothie (strawberries, bananas, OJ or apple juice, ice in blender) and freezing them in ice cube trays or small dixie cups with a toothpick or popsicle stick in them. =)
Sandra, they are actually VERY delish!! But, as I suggested, DEF wait for the bananas to freeze all the way, overnightish is actually best, and that way they taste EVEN YUMMIER.
DeleteI love making fruit smoothies, too! In fact, wayyyy back when in the olden days before the Hubsters and I had any kids, we bought ourselves a "juiceman juicer"...and we juiced and juiced every fruit and veggie we could get our hands on....
I have no idea why we stopped or even what happened to that Juicer.
